So, with the current soil bug, I thought I'd take this opportunity to get the hang of irrigation. I've been having a look at the wiki, and think I've got everything sorted, except for one thing...

How often do I need to flood my fields? Seasonally? Yearly? Like I said, I had a look at the wiki, but I couldn't find anything; it may have been lost/obscured during the shuffle between the .40d and 2010 pages.

Once you irrigate once, they stay irrigated for a "long time".

As in, I've never seen them go dry and have had forts (in 40d at least) last decades.

Cool, I'll set it up so that I can rewater if/when necessary, but if it's still the same as in .40d, I should be golden :)

I got a set up exactly like the one suggested for safe tower-cap farming back in 40d, complete with water wheel power & attached lever.  takes advantage of a U bend, so that water floods out from the floor into the farm.

Another quick to set up system that allows for easy re-irrigation, should it ever become necessary, is an airlock setup:

WATER TUNNEL - FLOODGATE - AIRLOCK ROOM - FLOODGATE - FARM ROOM

Door to the farm room, I believe, needs to be tightly shut during the process or water will spill through.

The sizes of airlock room and farm room are related. You need enough water to cover the floors of both the farm room and airlock room, plus some extra to allow it spread out quickly and easily before evaporation takes it's toll. A 7x7 farm can be irrigated with a 11-tile airlock: 49 water for the farm, 1 for the floodgate tile and 11 for the airlock room, totaling 61 while the airlock holds 77 units. 10-tile airlock probably works too (60 water required versus 70 in the airlock) but might cut it close.

At the start you can just fill up a small farm plot with buckets. Later you will find muddied underground caves.

FYI, the only reason irrigation is necessary is to make the ground muddy.  Muddy ground is all you need to farm.  Unless the mud goes away (can't see that happening unless you use MAGMA), you're golden.

Right, also dragon fire(this does, on unfarmed tiles at least) and other firely projectiles should be able to remove muddy tiles.
