I should probably mention my irrigation method again, because I think it's pretty simple.  I built my farms on the same level as a brook, built a cistern to the side and one z-level down, dug back up to the level of the farms and brook, while making sure to leave a wall between them, and then dug a tunnel that I connected to the river.  The cistern filled up, no water from the brook flooded because it was only pressurized up to the level of the cistern, and then I had a manually operated pump that I used to flood the farming chamber.  I had stairs that led into the cistern because of how I built it.  That was useful because the dwarf operating the pump got washed into the channels a few times.  Also, I basically turned that area into a fishery and water source.  It might need something extra if you tried it with a stream or river though, I'm not sure if fish are still terrifying in the new one, and I've never embarked on either of those anyway.

I use a multi z-level set up for mine. Since I start my forts just above the bottom, I just use water from the underground. I breach it into a small holding tank with a floor hatch over a hole in it. I link this up to a lever, as well as a door to control the flow into there. The farm below (or multiple levels below with a shaft for the water) is a little less  than 7 times the size of the holding cell so it gets covered in 1 deep water all around. I haven't have a problem yet.

Thanks guys, I used the pit hole with multiple pit zones above my farm method.  It's working quite well.  Hopefully this fortress won't fail from lack of food/booze.

Personally I did the following for a relatively quick way to make a farm (I was living in a cavern with the nearest water 30 z levels above or below):
RWWWWWW
          WP W
          WP W
          WP W
          WP W
          WP W
  WWWWWW
Where R is a ramp up to the W walls, and P is where the water will fill. Doesn't make the biggest of farms but its pretty quick to setup. I didn't think of making multiple zones to use multiple buckets, but even with one bucket it still managed to fill up to 6/7. My new version has a floodgate in the middle tied to a lever in case I have to reclaim my fortress for a second time.
