My clerk (starting game with proffesional appraisal & judge of intent) is a legendary miner, expert stonecrafter, a mason, a furnace operator, 4-type smith and hauler for furniture and items.

He never missed a caravan, though.

P.S. After he became a legendary miner, I turned his mining off. Same goes for future legendary jobs.

Just use other dwarfs to trade.  I have maybe a dozen legendary appraisers now.  It doesn't really matter who the broker is.

When you initially trade after the caravan goes up, the dwarfs skill in apprasing goes up depending on how many items are there.  So wait until most or all of your stuff is brought to the depot, trade, then exit and view him, and you'll see that his skill has gone up.  Then trade again and you may get a better deal.

Its true that after a time it really won't matter as you'll have so many good to trade you will always be offering way more than you are getting in return, and it won't matter so much.
