What do the skills do?

the skills im talking about are fighter striker kicker biter ambusher

Fighter: No idea... seems like it might just be a generic "you do everything related to fighting slightly better" skill, not sure.
Striker: Better at punching.
Kicker: Better at kicking (only happens when you don't have hands)
Biter: Better at biting (only happens when you don't have hands)
Ambusher: Better at sneaking (press shift+s to sneak).

Ambusher is probably the same thing as it was in the previous versions.

The rest of those you mentioned are what we used to know as Wrestling. Striker and kicker are for punches and kicks, biter is for biting. Fighter appears to be for other forms of what used to be wrestling, like grabbing and stuff.

Ambusher is probably the same thing as it was in the previous versions.

There's still a wrestling skill, so that can't be what fighter is.

EDIT: And Fighter was going up for me through just stabbing and slashing stuff, so it seems likely that it's just a generic combat improvement skill.

And I think that dodging still ups the wrestling skill.

Somehow my wrestling still goes up despite my lack of using it.

I think that it may be from twisting a weapon since it automatically pulls the weapon back out, and pulling a weapon out is technically a wrestling action.

Fighter skill affects Combat damage with weapons, and increases your damage or whatever as separate damage and bonuses from your weapon skill.
