my computer can't stand having music and DF going on at the same time and I don't have an MP3 player :(
if I did, though, I would listen to my morrowind sound track which contains the regular mw songs plus some extra in theme one; fantasy-sounding songs and all that

I liked the classical guitar so much I looked up some stuff to listen to on Youtube till I found a guitarist I liked:

But nowadays I listen to .mp3 packs of atmospheric fantasy music that people made for free for TES: Oblivion like http://www.tesnexus.com/downloads/file.php?id=4191 and others.

Finnish folk metal. This should link you to a playlist. The mix of English and bizzare Northern language makes an awesome sound to listen to. Not to mention violins and accordions are very dwarfy.

I like everything about them except the whole pagan thing. Can't really get behind that. I still respect them though. Seems like a good bunch of guys.

Neofolk/folk metal!

Empyrium, Agalloch, Ulver, Sculptured, October Falls and such. Some of the acoustic guitar pieces actually remind me of Toady's guitar (try the album Weiland by Empyrium to see what I mean).

And good call on the Shadow of the Colossus soundtrack. I actually recommend that to people who haven't even played the game or listen to soundtracks; it's that good. Of course, you should play the game anyway, because it is also good, but I digress.

I listen to the music from Dungeon Keeper.
While I'll stick to my music for sieges,that music right there is perfect for everything else in DF.Just fits the atmosphere pretty well.
