This is incredible... so all mammals (apart from humanoids) can be milked at will? Once upon a time I wished that my fortress could keep useful livestock without me having to butcher the poor creatures, and now my wishes have come true.

As I am very fond of cheeses, I shall finally fulfil my dream of owning a camel dairy farm. Bactrian of course. Either that or llamas I suppose.

As the thought has only just popped into my head, does a walrus have a milkable tag? And can they be bought from elves?

Just because you people put that mental image in my head I may actually have to mod that in.
Just when I think things can't get much worse than my current goal, skeletal mermaids in the lobby, you come and make it all so much worse.

No, with magma everywhere and underground farms requiring irrigation, pump operators have even more work now.

I rate siege operators rather highly myself, as I enjoy using them in defences. Few things are as satisfying as seeing the goblin legs littering your hallway after a successful volley from your ballista battery.

OK, dissectors are the most useless.

...I can't even remember what they're for. I mean, dissecting is obvious but...do they take parts out of animals or something?

Horse milk has been a staple in central asia for, um, ever?  Milking horses is not anything out of the ordinary or strange tbh...

And yes, dissectors are used for extracts.  Fish is far more useless because you SHOULD be able to get extracts of poison and other various things from animals using an animal dissector, no?
