Anyone know what tag now allows us to play, say, a kobold or something?

You can only play as creatures which have a civilization. Go to their civilization in entity_default, and add either [INDIV_CONTROLLABLE] or [ADVENTURE_TIER:#]. [INDIV_CONTROLLABLE] is a quick fix that will give you the Play Now! option and nothing else. [ADVENTURE_TIER] lets you choose from a list of civs and create your character, but it requires adjusting the number so that it matches up with all the other civs adventure tiers (in general, the lowest adventure tier goes near the end of entity_default and the highest near the top).

Just that I was looking for the Indiv_controllable tag in the creature raws.

You can give them a basic civ listing that makes them work, it's in the wiki under the adv mode custom civ.
