What should I do with the abundance of stone left laying around after mining? My fortress is so cluttered with it; creating stockpiles seems to tie dwarves up in hauling, and if I built a thousand mason workshops, it would take me about ten years to make enough thrones and tables to get rid of the stuff.

A little late to the party on this one but in addition to the suggestions you've already received you might also read up on quantum stockpiling. It's an exploit but nothing game breaking, its just nice if you don't like the cluttered look.

Do tin ores always come along with copper ones? Or am I doomed to a bronze-less fortress?

Tin ores and copper ores occur separately. You may have both, one or the other, or neither.

The Wiki mentions that skills train certain attributes.
Is this an Adventurer Mode only thing?  Or has anyone actually observed a Fortress Mode dwarf's attributes increasing over time?

i think its 10 levels but don't quote me on that. i also think its customary to install spikes in the pit, just to be sure
