Is it actually possible to set 'metal headwear' or 'metal footwear' or whatever in a new uniform on the military screen? I can't find those options. (Obviously would be select footwear > M > metal)

Also, is it possible to stack mail and plate and if so how is it done?

Cant. It's hard coded onto the default uniforms

Also, is it possible to stack mail and plate and if so how is it done?
Just put a few mails and a plate on a single uniform

I have a lot of caged goblins, and i don't know what to do with them, when i tried to trade the goblin escaped....do you think i should put them in a pit and eventually cause a cavei in their faces and watch them die or what?

caged untamed creature would be set free upon being brought to trade depot.
i would recommand you to build an arena where to put stripped goblin and/or other enemies fighting aganst your well-armoured dwarfs(with training weapons if you want those goblins serve this purpose for longer). but alway remember to strip them with d-b-c n' d-b-d the desired cages, and them undump the cages themselves with t(if built) or k.

the other use is kinda similar, but involving more complicated constructions. that you may, if having enough prisoners, send them as cannon fodders to fight forgotten beasts! in the cavern, you could buid a long corridor or any structure that could be sealed, and probably flooded(to clean up the mess or killing the alived after a bloody fight), also connected to an area where you set cages, which are opened remotely. it's like the old days, your military might or wit means using slaves to fight your worse enemies, without spilling any of your own dwarven blood. of course in this case, do not disarm those prisoners.

or simply take off whatever they wear and let them step on a very, very high draw bridge, then pull the lever....

All you need to do is check the Rooms menu and find the room(s) in question. It will take their value into account and refer to them as "Grand Bedroom," "Royal Mausoleum," "Decent Office," "Burial Chamber," etc.
The method that guy proposed is good because it lets you add a number. The experiment I proposed (and you did) only proved that that a room more valuable then 10,000 could be shared multiple times without it's value dipping below 2,500. I presume you did the math and found out the room was worth 10,000, or only a little more then 10,000. Which certainly suggests the 75% cut to all shared rooms is standard.

But if you'd been willing to put like four hours into it you could assigned the first bed to a Baron, set his requirement to some other number (say 11,000), seen whether the room made him happy shared and unshared, repeated with a different number, etc.

Getting spammed with "job cancelled, item misplaced" by many dwarves. Any way to pinpoint what they cant get to?
usually an item in a bin, or an item placeholder in a bin which has since been moved.

Okay, but is there a way to find out which bin it is? I can't begin to think of which bin it might be or why.

What is happening wrong here? Are they trying to stockpile something thats already in a bin, or what?
In most of my observed cases, sometimes bins get assigned to a particular stockpile like say, finished goods or weapon, but didnt get moved to that stockpile right away. However, it's still a legit bin to stuff things into, so a hauler try to put appropriate items in it. As he's en route to the bin, the bin is moved to the stockpile it's assigned to. The original hauler is now confused as he notice there's no bins there, cancelling the job. Other cases usually follow similar scenarios.

What do you propose i do to stop this spam?
Make everybody a hauler. Suspend all other jobs in the fort. Eventually the bins will all get put away and the spam will stop.

You just got to put up with this kind of thing sometimes in DF.

I finally have a little question.

My clothier is in jail for some reason. I don't know why because he's a clothier and the only mandates my Baron makes are for Lay Pewter items.

He's also three days away from dying of thirst/starvation. I tried a variety of methods to get my idiot dwarves to feed and water him. I suspended every suspendable job in the fortress, removed dwarves from hauling jobs, turned all hauling jobs off, forbade everything that could be haulable. At several points I had a third of my fortress sitting on its ass doing nothing. There's plenty of food two squares from jail. The problem can't be burrows because there aren't any burrows. It can't be access issues because the jail is in the freaking dining room, which is used quite a bit. I never, ever, disable the feed prisoners/wounded labor because I've only got 15 working dwarves.

I have a few ideas that might spring him -- de-roomifying the cage, and manually releasing him failed, but I'm hoping a lever will work and he'll run to the food -- but other then that I'm flummoxed.

The problem seems to be that the jobs are never generated, which means they can't be assigned to anybody.

Ideas?

EDIT:
De-rooming the cage saved my clothier. He ran three squares to the food stockpile and will now survive.

I',m still curious about why nobody was feeding him, tho.

EDIT2:
And now I'm getting spam from the guy who is supposed to re-arrest the clothier. "wrong justice state."

You can find out by going to the justice section in the stocks menu.
1. Cages are bad, as dwarfs will often let prisoners starve or die of thirst for no good reason. Use chains instead (have to be made of metal ropes won't do for justice). If you do this you can simply make food and booze stockpiles next to them and the prisoner will eat/drink by himself.
2. Prisoners will only receive water, make sure you have a water source and enough buckets.
3. I'm not sure if prisoners can eat prepared meals, try butchering something, he might receive some raw meat.
4. Soldiers who have woodcutting/mining/hunting enabled will fail to equip their uniform. This will also make them fail to equip a backpack which they will need if they are set to carry rations (the default).
This will also cause them to randomly claim any and all food items in your fort without eating them. Disable these labor for all soldiers or set them to not carry rations, if you want them to carry rations make sure every soldier has a backpack equipped (they will do this automatically if you have enough backpacks and they wear any kind of body armor/upper body clothing).
5. If you deconstruct the cage you should be able to dump it once it has been moved back to your cage stockpile, which should free the dwarf. The prison sentence will be upgraded to a beating. Make sure your captain of the guard/sheriff is equipped with the worst quality training weapon you can make.

I'll have to make some chains then.

I finally got my prisoner situation resolved. Designating my prison a free cage got him out. But that apparently confused the game so my Count couldn't re-arrest him even after I remade the prison. So told my dwarves to remove the cage completely, which cleared it, stopped the removal, and remade it a prison cell.

So my clothier is back doing his time. And not happy about it. The Count made him leave his barrel of wine outside the cell, but hey.

Can an object that falls through a hatch cause damage if it hits someone/thing? If it can, what's the minimum height for it to cause damage?

try dropping bears onto unsuspecting goblins, that'll cause some damage
