Do military dwarves always pick up the best stuff that they're allowed?

1. Is there a way to get another baron/count/duke appointed after after the previous one had an 'accident'.
2. Is there a construction that can be build to open/close and not get destroyed by building destroyers when closed?
3. Is it possible to create signs in fortress mode, such as 'flood chamber drainage ->' or '<- secret fortress entrance NOT chained dog Deathtrap'?

1. maybe/no/no
2. no, but drawbridge one one edge is indestructable when raised.
3. not yet. you can put notes for that fort though through (shift+N)>

Too bad about my duke... Gonna try better if I ever get a king.
Another question. I'm currently trying to build GCS silk farm. The wiki says tame GCS don't fire at enemies unless they attack them first, so I'm trying to make one with an non-tame GCS. My questions - what's the range of GCS webs and his line of sight? Also, can you close floodgates with GCS webs over them?
Edit: Are the guys from the 4th cavern trap avoid? I want revenge for my second fort.

not sure about first 2, but 4th cavern dudes have trapavoid and you can't close floodgates with webs (they're items)

I have magma industry - for first time ever. So - how can I switch between z-level -90 and -1 without holding ">+shift" for a few seconds?

The bait for your GCS may be at a maximum of only 4 tiles away from it. The webs itself will shoot further than that though (I've seen it reach 9 tiles max IIRC), but the spider will not target as far as it can shoot.

Closing a floodgate will work, but destroy the web.

using the (h) key, you can set hotkeys to jump to locations.

You use monochrome CRT still? There's no light grey, minor injuries (bruises) are brown. The color used are white -> brown -> yellow -> red -> gray and sometimes cyan inbetween.
And you cant directly interact with infants so you have to make do with their moms.
Oh yeah, I changed it to a more 40d colour scheme (white-grey-brown-yellow, plus black and cyan) the moment I learned about the option. Never mind then.

Can you put children in the military then?

Hotkeys can be a little tricky to set up the first time. First you press h to get onto the menu, then you select the hotkey you want to use (one already exists by default. It's called Gate, is bound to F1, and goes to the area the wagon was), then you go to the place you want it to zoom to, and then you press z. n is to rename it to something useful.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

How do you retake a door

q to query buildings, select the door with the cursor, x to remove building. A dwarf will come and haul it away.
'retake' I think means recapture after, for example, a kobold passed through.

What do you mean by "allowed to trade"?
If you have it set so only the broker can trade, then you need to have the broker there. If anyone can trade, then you need a dwarf there to trade.
If the caravan is packing/unpacking, then you cannot trade.

Do vertical bars block mist? I'm making a water fall in my statue garden, and I'm in a temperate biome, so I don't want dwarves walking into the water fall and having themselves encased in ice if it freezes on them, so I'm thinking about surrounding it in bars.

Twenty seconds after the collapse, 14 dwarves hit the ground simultaneously.
EDIT: make that 15. Not sure what took that last one so long.
