the area your civ covers on the world map might have something to do with it but seems weird.

Also pets give a good thought to the owner occasionally.  while they can be fodder their death causes bad thoughts and you need a coffin or they get a rotting thought too.  Unassigned war animals usually follow your animal trainer.  I believe that war animals are trained in reverse order that they were released/born/alive/available.  That it the most recent candidate is done first.  Read it somewhere possibly.

So.. if I fry a dwarf with magma, can they come back as a ghost?

Assign someone else to be your bookkeeper.  Record keeping levels up ridiculously quickly.

The key is finding someone with appraisal.

There are many issues with this statement.

Why

The key is finding someone with appraisal.
Make the bookkeeper your broker and have him trade once.  Appraisal is also easy to train up.

Because I am impatient, and don't like waiting a season or two for the benefits appraisal brings.

bookkeeping doesnt use appraisal. The associated skill is called record keeper.

But if your bookkeeper doesn't have appraisal, you don't get all the benefits of the bookkeeper.

I'm pretty sure that the bookkeeper gains absolutely nothing from having the appraisal skill.
