Is there a way to butcher animals that are not tame? Can you just have your military kill them then butcher them that way? Failing that is there another option? My fort is low on food but has many cages of warthogs (which don't seem to be tamable), is there an effective way to kill them for meat?

You can kill them with military, but if they are outside you need to change [ o ]rders to gather refuse from outside.
Also, make sure you have a stockpile that accepts corpses right near the butchers.

How can I get my dwarves to adopt vermin? Marking them as available doesn't seem to do the trick. Do they have to be in cages or animal traps? Does the trap/cage have to be constructed?

You can't make your dwarves adopt vermin.  The best you can do is mark the vermin as available for adoption, and then wait.  A dwarf who likes that type of creature may adopt it, or not.

How can I make goblins/megabeasts/seiges come faster/lower pop/wealth? Basically, how can I make combat get hard quickly? I saw some statements about a megabeast cap?
Ok, so I decreased the titan minimum pop and stuff. Does the goblin attacks scale with that, or is there a different way to make sieges appear faster?

What do I do here?

Magma-safe floodgate here, link it to a lever with magma-safe mechanisms. Pour some buckets of water around it. It's underground so it take some time to evaporate.
Carve fortification here. When engraver is engraving assign him task somewhere so he immediately do it after done.

Result: New scapegoat engraver come, punch a hole in the wall and run away over the pool, immediately dosing any flammable traces.
Just so you know, you have 2 up/down staircases there. Lava can go through it down to other z-levels if there're any under.
It's better to use a ramp and do the same thing one Z-level down. Much less chance of accident.
That works great on the very top level of a volcano.

But to do that you have to have open space directly above a volcano wall, and DF2019 volcanoes are  straight up-and-down; so it's only really practical on the tip-top level of a volcano.

Magma does not pressurize, so the chances of losing the engraver are identical. However, doing it one level down in a dedicated channel means that there is no chance of magmaflooding your fort.
My point was that it may be physically impossible for him to do this with channels because he probably can't get directly above the square he'd need to channel.

If he can do it with channels he probably should. I do whenever possible. But he may have to use an engraver.

You misunderstand what I meant. He should channel down, dig out a reservoir, and tap the magma with an engraver there, so that the flow is contained.

Its still fairly early in the game (still havent finished setting up the fortress let alone create an army or set up traps) and theres a hydra running around taking out guys left and right...i need some way of dealing with it  :'( ´

please note i havent found any lava else i wouldve already created a doomsday lever

It's really funny watching them do unnecessary surgery because of a wrong diagnosis.
the conditions were bad enough to turn a dwarf who didn't care about anything mad, that's pretty hardcore.

make sure you remind them to bring picks. It has taken as little as one. Keep in mind - picks use the "Mining" skill. Are they as untrained as you think they are?

The first one could get a lucky shot and kill it instantly, or all of them could get their heads torn off.
It could go either way, but experienced miners are good with picks, and picks are good weapons.

i lost 3 guys (1 legendary the other 2 idk what they where at) and the hydra is still running around...1 legendary miner left...need ideas :s
