Elf merchant stricken by melancholy, camel gone stark raving mad! Now all my dwarves are just going out there in droves to collect all of the goods and return them to stockpile. WTF?

How do traps work? I built 2 rows of cage traps at my gate using mechanisms and some dwarves carried the glass terraniums (I think) on top of it to make the green symbols lighter. Are they armed? After a creature is caught, how do I move it somewhere?

When goblins (read: enemy mobs) walk into the trap they will be caged. If you have an animal stockpile the dwarves will drag the goblin cage to it and rearm your trap (so have some spare cages available).

How you dispose of the goblin after that is up to your inventiveness.

Hey I'm trying to re-equip my dwarves with better equipment but they don't want to drop the old and broken stuff.  So they just keep collecting and now my dwarves have 2-3 shields and multiple weapons each.  For-biding or dumping the items still don't cause them to let go of them, also marking them up for melting doesn't work either.  I've tried creating a new uniform that says replace current clothing but they ignore that as well.  Anyone have any ideas on how to solve this issue?

Yes to both...
(aside from the normal clothes you can wear under normal armor)

And remember that you have to assign your dwarf 2 gauntlets and 2 high boots,
else he will only use one

well, not exactly. I`ve conducted some tests.
Testing in arena: in three 15x15 dwarves battles where both sides was equiped with iron battle axes and iron full armor and one of the teams was enforced with leather robes, team with robes was a victorious (2-3 survivors).

It's the MOST you can equip. "Best" is far less clear-cut. I'm not certain to what degree it matters, but having too much armor can have unwanted effects. For one thing, dwarves move considerably slower.

In general you want a mixture of dwarves. Kit your wrestlers out in leather armour, ensure its a couple of your faster dwarves. They can run after the targets and wrestle them to the ground.

Have a couple in slightly heavier armour but not full kit. Breastplate, shield + weapon should do. These guys are hot on the heels of the wrestlers to actually cause damage.

Finally the full kit gear youve mentioned is good for Door Guards.

Question:

If I dig a channel from a surface river all the way down to the first cavern (which already has water), will the cavern eventually get flooded? What I mean is... If water falls on 7/7 water and there is no other way to flow, will it stack and form a new 1/7 water tile one z level above, slowly filling the entire cavern?

Water flows off the edge of the map. You would need to wall off all the edges. Also the underground pool will take infinite water and remove it if there is an edge.

I just checked - my military are equipped with an uniform that lists "steel high boots" once, but they are wearing both right and left boot. Not sure about assigning armor to individuals, though.


Questions:

1: I'm having problems with my stone crafting. My crafter is pumping out crafts none-stop, but the finished goods pile is empty. The furniture pile is full of bins, so that's not the problems. Both of those stockpiles are the standard variant. The craftdwarf's workshop is filled with stuff. Is this a bug, or just weird prioritizing? Would it help to activate hauling with the craftsdwarf (I already have 10 designated haulers out of 20 dwarfs)

2: I've got a couple of dwarfs that's constantly training, equipped with training axes, but the axe skill is leveling really slowly - I've had them at it for a year or more, and two are still just dabbling. Is there any way to speed up the training?
