Is there any way to remove down staircases?

Hm, not really conventional but you asked. Just channel the stairs then build a floor over them.

Also, how long is an in-game day? A minute?

Varies depends heavily on your FPS. Here's a wiki article to help with it.

I have about 30 cage traps set up in two spots in my fort (around the entrance and in the caverns). I recently caught three goblin snatchers without getting any of my dwarves hurt. The goblins are now in the animal stockpile, along with a bajillion elk birds, a Gorlak, and a troll.

My question is: how do I get only the goblins into the Colosseum I am digging out? I intended to use these cage traps to get animals to tame for when my DM comes, not for fending off invaders.

Also, do I need mechanisms to open the cages? I'd prefer to have a fully armored axedwarf open it instead, so I don't have to go through the work of making 7 more mechanisms.

I've never seen dwarves give birth in any of my forts, and I suspect it's either impossible or very rare.

Guess your dwarves don't party much. If you use DwarfTherapist, check the male-female distribution. My modded forts have a great deal more females.

Cages can be built, same as beds or tables. They're 'j.' When you pick the one you want to build in a place you can hit 'x', which lets you pick a specific cage from a list that includes the name of the caghe's occupant. So your goblin cages will be listed as such.

The mechanisms aren't as big a problem as you'd think. When you're done you get them all back simply by unbuilding the level you pulled.

Before you do make sure you've disarmed the gobboes. With thieves it's not essential, but eventually you'll cage an ambush party, and it's quite satisfying to watch that legendary axegobbo run in circles as he's hacked to death by some of your crappiest troops.
To do that you need to dump all their stuff in a heal, and to accomplish that you have to unforbid all of it. Step one is to tell your dwatves where to dump gobboe crap. Create a zone with the i menu, and set is a garbage dump. Step two is unforbidding the crap. Use the d menu, hit b, hit c, and then select an area around the gobbo cages. Now you tell the dwarves to dump the stuff with d-b-d. IOf you've done it right you'll have dozens of "dump item" jobs on  you jobs screen.

BTW, when you get advanced you can decide to only dump specific things. Arena fights last a lot longer, for example, if you only dump their weapons.

My map has a lovely brook, and I was planning to channel a path underground, making a loop like so:

The d would be the fisherdwarf, and the G would be an exposed tile covered by a grate to fish through.

Would this sort of thing work? I'm not sure if grates can be fished through, or if fishing in a brook is even a good idea in the first place, and the last thing I want is an alligator coming into my fort.

I have good news and bad news:
Good:Alligators don't live in brooks.
Bad:Fish tend to stay in the brook. Unless you re-routed the brook, those fish will stay in the brook.

I vaguely recall fishing through a grate in 40d. If I did not hallucinate that episode it probably still works in DF2010.

But as Gaxkang says alligators don't live in brooks, so you don't need it. Unless you plan on fishing in the caverns...

As far as where fish stay, the fish you see on the map are full-fledded animals. The ones you fish are technically vermin, and will magically teleport to any appropriate square on the map. Thus you can fish in aquifers. Try not to overdo it, tho, any truly large fishing operation quickly catches all the fish on the map.

Yeah, big fish that try to eat your dwarves need to be butchered, usually by your military. Fortunately, they rarely show up in brooks, so you should be safe.

So I have one of my most successful fortress up and runing, about 41 dwarfs.
Not that many military, around 4 Axedwarfs and 2 markmandwarfs.
I am not used in combat, since everytime I've been highly outnumbered or I haven't got any defence at all.

I took some advice and have built some traps, six to be precis, right infront of my door-entrance.

Now the problem is, I don't know if I have any other Civilizations around.
Will the Goblins come eventualy? Or are there times where you get no enemies?
I got the Elves. But haven't got in contact with any other.
Can I check it up?

And what is a good routine for military? Have them active all the time? Or activate them as soon as hostiles appear?

Edit: Just found my first underground cavern. I'm excited, yet scared! Any tip?

I'm playing a fort with the condition that all trades are done via cut gems.  In order to get them, I'm taking huge sections of the caverns and de-geming them by carving up/down stairs up to a particular level and then connecting all the "diamond shoots".

My question: Is their a way of designating up-down stairs on more then one level? I would think starting to designate on level -10 and stopping on level -2 would create a chain of stairs, but it only works on the level that you end on.
