I pretty much just want to make 100+ 3x3 bedrooms with one bed, chest/sack, cabinet and door, and let dwarfs claim them as they want, but perhabs marriges reqiure something more.

Nope, dwarves will happily sleep atop each other. And once kids leave mama's arms, they go claim their own room. Also, as stated, they usually sleep at different times, anyway.
not that they need to. it's all done by SporesTM (currently at least)

I take it atom smasher have to be at least 3x3 with the items dumped in the middle, or do they have to be surrounded by walls/doors?

I actually thought it was quite funny to see all the goblin corpses and unbutcherable animals go flying. It must have been terrifying for anybody standing below them.

Atomsmashers can be 1x1, although it's usual to make them larger as a single-tile raising drawbridges look the same whether they are raised or lowered.  Make sure you are building a raising drawbridge, not a retracting bridge.

No, actually. You can make a 2-tile (down-pushing) or 1-tile (up-pushing) atomsmasher if designated right. use dump zones too.

What's the mod to make multiple bars used? I thought it was a hardcoded issue.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

only 1 level. not sure if open space above will atomsmash, but subconscience says yes.

I'm pretty sure you do not need any open space above a raising drawbridge.  My atom-smashers are always underground, and I've never had an issue with them, and I can't imagine that I always just by coincidence had open space above them.  I've never even thought about it.

Raising bridge do not need any empty space over them in order to raise.  They just need the Z-level they're built on to be clear so you can build them.  They don't so much raise as vanish and turn into a wall.  I envision them as folding up accordion-style rather than pivoting up, although that's admittedly an absurd image.

We're talking about dwarves here. They could be building everything to fold up accordion-style, and it would be completely in line with everything else they do.

Is there any reason for a dog to just start going nuts on people?

Seriously, there's a named dog, with a living owner, just attacking people and animals at random in the meeting hall. He hasn't killed anyone yet, but I can't slaughter him or order him attacked.

Aside from injuries he's earned himself from attacking a tamed cougar, there doesn't seem to be anything wrong with him. It's weird.

He's crowded and lashing out. The animal aggression code is a little wonky at the moment. Animals fighting because their pens are too small is fine, pet dogs... not so much.

Make the meeting area bigger and get as many animals as possible out of the way.

Go to the orders menu and set "All Dwarves Harvest" to "Only Farmers Harvest."
I'm looking at the standing orders (to keep everyone from rushing off to harvest plants when they mature), and the wiki is a bit unclear on:

"h" - toggles who will harvest plants from farm plots - if set to "Dwarves All Harvest", all dwarves will participate, including nobles and children.

Does this then restrict the harvest to only those with "Farming (Fields)" enabled under their preferences/labor choices?
