Not very. Training is a little tricky, and there's a few ammo assignment issues, but they work well enough.
So training is tricky but unbugged? If the trickiness is in setting up archery ranges so that they don't overlap and are long enough to shoot in, then I can do that.

Are the ammo assignment issues limited to them being unable to tell the difference between training and combat bolts?

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

Sometimes two archers will try to pick up the same stack of bolts, and some other wierdness. They're still usable, just a bit frustrating.

I've found defining each target as it's own range and assigning the squad to train there works too...

Bolts, I've given up on, and just use bone for everything... Will be a problem later, but will use iron for everything once I have magma set up.

Do magma powered workshops and furnaces use up magma; possibly when not even being used? I had some magma drain dry for no apparent reason.

I've heard about this before.  I think your magma sea is draining into hell.

I have a dragon on a chain, and need to get some overlooked components to the trap that it's a part of built. Is there any way I can keep the dwarves from constantly freaking out about the completely harmless dragon?

Change it's raws from PET_EXOTIC to PET (I think it's pet, might be TAMABLE_EXOTIC) then use an animal trainer to tame it.

I'm trying to construct an irrigation system and my dwarf always wants to build on the north side of the flood gate which will end up in it getting stuck is there a way to stop this?

This is a very common problem when building impassable constructions and buildings (walling off an area). To make the dwarf end up on the right side, designate a wall to be built on the tile(s) you don't want the constructing dwarf to be standing on. Then suspend the construction of said wall ((q)->(s) on it). Once the floodgate is built, remove the designation ((q)->(x)).

Yes, if you assign it to a dwarf they will have good thoughts about being "thought about" or something

No, but you can' build walls there. Fortifications do fine, though, so go ahead and build those.
