No, doors will close freely even if occupied by 7/7 water.  They will not close if any creature or object is in the space, but will not be held open by water.

Really? Is this new for 31 (I don't see anything in the 40d section of the wiki)? 'Cause I thought there was a reason why the fluid computing examples on the wiki used 100-tick floodgates instead of 0-tick doors. Maybe it's because a mechanic can't go from unstuck to stuck in the process of hooking up the lever or whatever...?

Edit: although you could get round that by locking the door or forbidding it (maybe. Never forbade a door before) before hooking the thing up.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

As far as I know, doors have *never* refused to close on 7/7 water.  It was true in 40d, it's true now.  Most water logic computers use floodgates instead of doors for timing consistency - floodgates take 100 ticks to open and 100 ticks to close, while doors take 0 ticks to open but still take 100 ticks to close.  Having opening and closing take different amounts of time can make getting the timing of logic gates right trickier.

That should really be on the wiki, I've got an idea that uses water logic and had a step that used the instant response of doors. Do hatches also take 100 ticks to close? If they do, I'll just add an extra step to the repeater...

Doors and hatches take 0 ticks to open, and 100 ticks to close.  Floodgates take 100 ticks to open and 100 ticks to close.  Bridges take 100 ticks to raise/retract, and 100 ticks to lower/extend.  Gears respond instantly, toggling states whenever they get a on or off message.

Build a chokepoint and hope that the elephants walk into your cage traps. Not much else can be done.

Observe their "migration patterns." Many animals/generations of animals seem to have "favorite" paths. Creating your chokepoint between to points they often travel between is bound to catch some sooner or later.

However! Beware of direct confrontation! I haven't confirmed it, but it seems that once your dwarves/wandering caravan guards agitate some of the larger, normally passive beasts (elephants, rhinoceroses), all the future members of that same species you encounter will behave more aggressively, charging into your fortress or destroying infrastructure outside..

Elephants seem to be very curious of doors.
For instance, I had a 4x1 corridor with a door on each side, like this:(D=Door ^=Cage Trap)

The elephants wandered through, got trapped, and proceeded to run away every time they passed through the 2nd door.

Go to the [ s ] squads menu and choose a squad. assign them to following the route.
