When you make a new burrow, no dwarves are assigned, so nothing should happen. Assign some dwarves with the assign screen, and the assigned dwarves will stay in there. Dwarves that aren't assigned to any burrow will happily walk just about everywhere you don't want them to go.

I've tried both, but as soon as the goblins get within a certain distance they charge blindly off one at a time and get hosed. Even my best soldiers tend to die, as eventually they knock a goblin out and then stand there stupidly trying to hit it in the head for five minutes getting deflected by the helmet while all of the other goblins gang bang them.
Ah. There's nothing you can do about that aside from removing the dwarf from the military altogether and triggering his civilian "reflexes".

Dwarves do not understand "tactics" or "retreat". If a military dwarf spies an enemy he will attack it with all the power he can muster until the enemy is dead or out of sight, or the dwarf is sufficiently injured to want to try fleeing.

Will they not switch targets when assigned via (k) in the squad menu?

ive gotten in the habit of replacing my chief medical dwarf as soon as he gains any notable skill in diagnosis.
It's really funny watching them do unnecessary surgery because of a wrong diagnosis.
the conditions were bad enough to turn a dwarf who didn't care about anything mad, that's pretty hardcore.

Not as good as steel (I assume), but it's artifact armor so try it out.

If they're stark raving mad, they won't attack your dwarves, but make sure there are no berserk guys in there.

Ahem. I know this isn't a bug report topic whatsoever, but I need a speedy little reply. Is being completely unable to place a Trade Depot a known bug for .18? Its seriously getting in the way of my community fort.

how do you build a smelter?
Do you mean a magma smelter?
If so, you need to discover magma first.

What do I do here?
I want to make a pit to make magma smelters and stuff on, but whatever I do, my retarded miner burns to death, or I flood the fortress.

What do I do here?

Magma-safe floodgate here, link it to a lever with magma-safe mechanisms. Pour some buckets of water around it. It's underground so it take some time to evaporate.
Carve fortification here. When engraver is engraving assign him task somewhere so he immediately do it after done.

Result: New scapegoat engraver come, punch a hole in the wall and run away over the pool, immediately dosing any flammable traces.
Just so you know, you have 2 up/down staircases there. Lava can go through it down to other z-levels if there're any under.
