How do I keep my stockpiles different? When I change one I can't seem to change another.

when designating stockpile you can make a standard custom stockpile setting which will be used after that

workshop i dont know

No, but you can use macro to record typical settings.

What's the best material to use for shields? I'm considering using my modded super-heavy Adamantine alloy to help with shield bashes in adventure mode.

Yeah, I just find that mist generators are the lowest maintenance way of producing mist.

Falling any type of walls are deadly, regardless of what material they were made out of before the cave-in.

Well I don't need a cave in. JUst planing to make an artificial rain of meteor for any attacker.
 Build tower.
 extend with wooden floor .
 Build walls on floor.
destroy floor with fire.(subject to new ideas of making the walls fall down)

Constructions (such as walls and floors) are immune to fire.  Even if they're made of wood.

What you want to do is support your collapsing section with a Support, and link a lever to the support.  You can then pull the lever to collapse it.

Well, you could always drop constructed magma containers at them, I'm not sure what would happen when they deconstruct upon landing but it might be !!Fun!!... Just not made of wood, IIRC it's not magma-safe :D

No.  A single water pump can only raise water one Z-level, from the level below the pump to the level of the pump.  To raise water more than one Z-level you need to build a pump stack, with as many pumps as Z-levels you want to raise the water.
