Specifying statue types etc.

I heard that you could specify what kind of statues and craft decorations to create in DF2010. However when I play it there seems to be no such option? Any help on this matter?

I'm pretty sure that was one of the things that was planned, but ended up getting cut out in order to make this release happen some time this millenia.
