Catch dee feesh

Do fish respawn in a brook or river eventually or am I screwed if I've fished out a body of water?

Which is really unfortunate, because dwarves like fish. Also eating.

 The best way to avoid overfishing is to only have a handful of fisherdwarves.  If you have no running water source, don't fish at all, because swamps get emptied very fast and don't replenish anywhere near as fast as even one unskilled fisherdwarf can empty it.  If you're fishing along a stream or river that leads to the ocean, however, you're pretty safe: migratory fish like shad and salmon will make bi-yearly spawning runs in the spring and fall, meaning you can safely fish during those times, catch a huge amount, and still be sure that more fish than you could ever catch will come back next year.  It'd take about 20 Fisherdwarves of decent skill with a raw fish stockpile right next to them to put a meaningful dent in the spawning runs.

If I have a oceanside fortress, is it even remotely possible to run out of ocean fish?

I've got a brook in a box canyon, cant remember if it leads to the ocean or not

 Brooks don't tend to lead to the ocean, but if you are lucky enough to have one, the game doesn't seem to actually notice the whole "size" issue involved with an entire spawning run of fish going up and down a body of water that's ostensibly supposed to be about half a foot to 2 feet deep.
