How exactly do I get a noble to go into a room? Is it as simple as putting his bed/furniture in there? I've never really seen this explained.

Yes, that's what I meant by his bed. So I just assign furniture to him, wait till he goes in there and lock him in?

Pretty much. Or, you can build a lever, use the workshop (P)rofile on the lever to limit it to only the offending noble's use, and then set it to be pulled. The noble will then come along and pull the lever, and either you can lock the door while he's in the lever room or the lever itself can seal the way out.
