Perhaps my memory's off, but I could swear I once got a metalcrafter demanding bronze bars, specifically.

Did he say "need bronze bars"? Or "need metal bars" and you had to check his preferences in order to find out what metal it was?

Then you're contradicting common knowledge. While I don't question your sincerity, it should be understandable that I'm going to be skeptical.

Dunno about Bauglir's experience, but I have had moody metalworkers who've specifically demanded that I provide more star iron bars, and the DC mood-alteration apparatus includes some specificity WRT to which metals your mood uses.

The dwarf just goes through his list, you watch it until it repeats, then you check the workshop with T, and see what he has, match it to the list, and see what he's missing. If he wants two of an item, it will display for twice as long before going to the next one.

It might have been in an earlier version. I've only played 40d, but from what I hear moody dwarves used to be pretty specific about what they wanted in older versions of DF.

Not relevant to this particular discussion, but they'll ask for [DEEP] metals by name in 40d. I say [DEEP] and not clownite because I've had dwarves screaming for patterned marage bars, which have nothing to do with clowns (or vanilla DF, for that matter).

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

I recall having a problem with some moody dorf that was hung up on metal for sure.  (I even unforbade the turtle shells, (pig tail cloth), and the cheap gems.)

After checking his preferences and much more forbidding and unforbidding and twiddling with doors and trying to find which metal stockpile the good stuff was in, he finally took off and picked up that last bar where it had been sitting all along in the smelter.

I can only surmise that dwarfs hate us and want us to suffer and that I really need to learn how to build a magma doomsday device.  Or maybe it kept getting tasked for storage before he could call dibs.

Either way I intend to play with fire.

Here's a way to figure it out: use the "t" command to look at the shop. The items already gathered will show up with "TSK" next to them. The cool part: they're listed in the same order as the dwarf's demands. So you see two stones, and then you use "q" to see the demand "stone ...  bones ... gems". Now you know you're stuck on bones and not gems (yet).

When a dwarf has a long list of demands, using "t" like this is the easiest way to figure out what the dwarf needs next.

I have had an armorsmith demand specifically Copper. He made a rather nice Copper shield, studded with copper. I liked that guy, shame the fort died because of over-immigration.

The multiplier for artifacts is the same as masterwork, so 2x the damage and skill modifier of a no quality iron mace.  Thats roughly equivalent to a steel mace with 3 levels of quality, I think.  So not bad but artifacts aren't particularly special in this version, sadly.     
I'm not sure about that. There has been plenty of discussion about artifacts giving up to 500% bonuses, and since we can't find anything which tells us for sure, that's going to remain a mystery for now.

Of course, regardless of how much damage it does, giving it to a champion macedwarf is required by law.

I've had a weaponsmith (or was it armorsmith?) with an affinity for gold refusing to make his artifact from any other metal.  The demand he made didn't mention type but he would sit there waiting until I unforbid the gold bars, no other metal was taken even though it was sitting in the same stockpile.  This was in 40d/MM tileset.
