Beard = Sanity Level?

So it was talked about in  various places of having dwarves tug out their beards when they're upset. Perhaps this could be used as a subtle clue to warn a player how soon the dwarf will kill himself.

So as a dwarf's morale stays in the danger zone, he starts doing undwarfy things, like plucking his beard. If he's only been that way for a short while, his description text will just read "Has been tugging at his beard lately."

As morale stays in the red, the text will evolve into "Has pulled out clumps of beard lately." and going on to "Has ripped out huge patches recently." and eventually "has torn his beard apart" and that is your indicator that in about 5 seconds, that dwarf is going to go super saiyan on your fort!

It's a bit.. generic to let them all pull their beards. Instead you should implement several nervous habits. When they're not feeling comfortable they'll start doing those.

It could be;
plucking their beards,
scratching their skin,
constantly twitching a certain body part,
quickly changing moods,
etc,
etc

Yeah, I could see that quickly becoming uncomfortable.

All these currently do is add flavor text to the descriptive paragraph.  Eventually those will translate into physical behaviors with consequences, as described in the OP, but that won't work well until dwarves have more complicated mental states, e.g. "nervousness."

When I saw the eyes in that list I cringed at the thought of dwarves playing with their eyes as if they were yoyos.

Question is, why the HFS do I think of dwarves playing yoyo when I see the eyes in that list of mannerisms?

Considering all the other crazy shit that goes on in this game, I'm surprised you didn't think of something more gruesome.
