Make them all masons, make a bunch of workshops that legendary or higher masons are not allowed to use, have them make tons and tons of rock blocks then use these blocks in constructions. Increases fort wealth and because blocks have no quality modifier a block made by a peasant is as good as one made by a legendary +whatever mason.

Also, set them to stone detailing and have them mass smooth everything in the living areas. When you run out of stone up there it's time to start making some massive treasure hordes. Carve out an entire Z level minus some columns for stairs, smooth it, remove all stone, engrave, mass stockpile stuff in it.

Either that or be really dwarfy and put them to work on megaprojects. Ziggurats are always fun, and Armok appreciates the attention. Also fun is making use of all of those stone blocks you have to make a surface fort around the entrance to the underground one. Also anything involving magma is Armok-approved.

I once saw someone suggest having a room full of disconnected levers, all with "pull lever" set on repeat. Apparently it keeps the dwarves paid, if nothing else.

There's also the screw pump gym method (dozens of screw pumps set to manual pumping which don't actually pump anything), which at least boosts all your Dwarves to ludicrously high stats and eventually gets them up to Legendary Pump Operator status.  But you get a mess of job cancellations too.
