I've set up a trap for the giant eagles that sometimes appear on my current map. Basically, it is a walled off hut with a roof, four entrances on the ground level each with a cage trap in the only space.

There is a restraint in the center, and I'm not sure what to put in it in order to get the giant eagles to come and try to get some dinner. I currently could put some kittens, puppys, mountain goats (and mountain goat kids), or a hoary marmot. Any suggestions or insight?

I've tried a puppy trap for giant eagles before. Mine was cursed, in that the eagles never took the bait.

Im pretty sure they will take any bait, as long as they can see it. Make your huts roof out of glass bridges or grates, and make the wall from fortifications.

Also make sure the eagles could path to the creature even if they could only walk to it. The current pathfinding might make them ignore it otherwise.

Though if you want to please the giant eagles only dwarves will do

When I had an open chasm with breeding pairs of giant bats and cave swallows, I just put a lot of cage traps around a chained horse. It helped a lot when about five cave swallows moved in at once.

And sadly, dwarves make good bait, but for bad taming...
