Hmm... sounds weirdly like my uncle who has IBS.  Not exactly a glamorous disease to have, but nevertheless can be very difficult.

Actually, reading the symptoms of IBS online, I reckon my uncle doesn't have it.  Whatever.  He doesn't eat a similar list of things.

Yeah, I don't have it.  My list of things I don't like to eat is pretty much determined by 1. texture 2. richness 3. flavor (oatmeal :I) and 4. processing ability (vis-a-vis meat).  I also eat obscene amounts of curry with little trouble, so I'm really guessing IBS isn't the problem.

Things that make me feel sick:

Meat (specifically shrimp, which is the last time I ate meat [accidentally])
Oatmeal
Eggs
Cheese
Chocolate

That's the kind of general list.

How funny, except for (possibly?) meat and oatmeal, those things set me off too.

Not to say that stops me. <_<

Uh... it's funny, the same uncle also likes curry a lot.  But yeah.  Curry's awesome.

All cheese, yes--but some kinds much worse than others.  It's made me gag ever since I was a little girl (as does any egg that's not Extremely Cooked, and oatmeal in general).  As far as chocolate, that's mostly a sort of nausea thing due to being too rich.  Doesn't keep me from eating it, but it tends to make me feel kind of sick.

What is your metabolism like?

Some people can eat nothing but peanut butter all day long and never gain an ounce.

Other people, like myself, can do strenuous exercise on only 1,000 kcals a day and not lose weight.  :(

If you are continually hungry you may just have a high metabolism. If you are still hungry yet gaining weight then it may instead be that you are not getting enough of the right nutrients. Check to see what is in the food you're eating. You may just be eating the wrong food.

People used to let me come play with their kids only because I look so malnourished.  Basically, whenever people look at me, they tell me I should eat more (other than my mother, but she's one of those "GO BE THIN THIN THIN" people).  I've also been asked if I was anorexic (not when I was starving myself, even).

So basically, I get hungry when I work hard; when I eat enough, I don't get hungry and I tend towards losing weight.  I'm still functional on 400 kcals/day, though.  Don't know how, but I've managed it.

Are you sure you're nutritional intake is balanced enough? I'm not sure exactly what vegetarianism entails, nutrition-wise, but it could be excluding you from things other than protein that might be causing your troubles.

I have been blessed with a rather kick-ass metabolism. I can eat a great deal, or very little, and maintain a steady weight and energy level.

I'm fairly convinced I photosynthesize, and the whole eating thing is just for show.

On to the topic at hand! It may have been covered already, but Indian food is often a great place to look for inspiration. It uses mild cheeses that you might find palatable, tons of vegetarian dishes with reasonably high calorie levels (that still sit lightly), and almost everything tastes fantastic. I have a friend whom I could totally tap for meal ideas, since she's a vegan in a similar boat, cramming for her GRE.

Off the top of my head, Dosas (flatbread often filled with mild cheese, green onion, seasoned potato, vegetables, etc.) might be a good snack food to look into, as well as vegetables fried in peanut oil.

I personally rely heavily on pasta, mostly since I love tomato. A good source of carbs, as well as quite flexible, and extremely cheep! I recently made Ravioli from scratch, and you can do hundreds of different fillings, with mushroom, ricotta, pesto, etc. etc.

Have you tried dark chocolate? I myself don't like extremely rich sweets (although I think I may have a little more tolerance than you) but I've always loved dark chocolate. It's good for you too, in small amounts.

What do I eat so I can stop feeling like I'm about to die every three hours or so?

Back when I was starving myself, I ate 800 or so.
Feeling like you're going to die every three hours? Gee I wonder why  :P
Quote
Currently, I'm eating something like 1200-1400.  My required kcal has increased by 800 already (hello, hunger-every-three-hours) due to an increase in concentrated study to 9 hours (wasn't really focusing before.  Now I am).  Since the goal is 14-18 hours of study a day, I have realized that I suddenly need to eat a hell of a lot more.
Ah, ok. More brain fuel? I recall the evolution of a larger brain required us to significantly increase our fat intake. And bananas. Bananas have something or other.

I don't know brain food very well but I do know some methods of feeling less hungry. Namely, stretching out your diet across the hours so you constantly snack and increase your protein intake. Protein fills you up good, but only temporarily, so stretch out your intake of it. I nibble on jerky, but that probably has more sodium that you'd like. Also things like oats and oatmeal that expand a little in your stomach can help make you feel fuller than you are. Good for your fiber and grain. Eat slower as there's a delay in the feeling of being full.

That's all I can remember right now.

An oily grain snack goes a long way for me. Sometimes just a tortilla fried in a half tab of butter, and if I'm very hungry some cheddar cheese or (OR, not AND) peanut butter and jam. Yes, this tastes good in a hot crispy tortilla!

Nuts and peanuts are good--just a small handful, like 7 or 8 nuts. Then put the container away somewhere. :)

A banana and a glass of orange juice makes a really good snack too.

Of course!  I wondered why he was female and wore a kimono.

As for 400 kcal a day... Christ.  I mean, I suppose a smaller woman is likely to have a lower metabolic rate, but still...

I guess you could try building up gradually - any sudden increase is gonna make you sick.
