Pressure plates and doors.

So I'm setting up my defenses, and one thing I have planned is something like this:
X++X
X++X
X++X
XDDX
X++X
XPPX
XDXX
X+XX
X=Wall, +=floor, D=Door, P=Pressure plate
The idea is the pressure plates (either one) will close all the doors, trapping the target. But how would I get the doors to stay open, and then lock when the plate(s) get(s) triggered?

Also, the single door leads to my fort, and I'm not sure if I'll be putting mosters in the locked room or water. (Magma would be bad, the single door is wood.)

The door is always open (as in passable) until locked.
There is no way to open it without jamming it then the plate wouldn't close the door.
(Magma would be bad, the single door is wood.)

Mayor:GOOD GOD URIST, YOU LOCK US IN HERE BY A MAGMA TRAP WITH A WOODEN DOOR AS THE WAY IN?!?

Mayor:Head for the hi- OH GOD, I'M MELTIIIINNNNNGGGG!!!

So wil stepping on the plate lock it, or open (Like with levers) it?

If the door is forbidden, whenever the specified creature type steps on it it should unforbid/open

if it is just a regular door it should lock.

I don't think that's true.

I know that when a door is hooked up to a lever, it acts more like a floodgate, opening and closing depending on lever status. Shouldn't it be the same for a pressure plate?
