Are there any rules for using animals to aid in farming (like, having an ox pull the plow?)
After a bit of thought, things animals can do:

Double a farmer's work output (50 fields maintained, or 10 plowed).
Double the output of foragers or wood gatherers (6 wood or food).
Turn a footsoldier into a cavalryman/cavalrywoman/cavalryxeno.

Barely. They produce as much as a person for the same food, but cannot be taxed. Their ability to work is mostly just so cavalry isn't quite as expensive.

After thinking about it further, I'm nerfing their ability to do work, so cavalry or infantry is more of a choice.

They may:
Increase a farmer's work output (35 fields maintained, or 20 plowed).
Increase the output of foragers or wood gatherers (5 wood or food).

Or you could split it between Work animals and Military animals.

Work animals should require a penned area or building to stay in and increase worker efficiency. Maybe 1 work animal per x number of people doing a job increases output by some %. Probably a level of diminishing returns, so that having a barn with a few work animals is very useful but beyond half your population they start to cost more food then they give.

Military animals allow for Calvary (which are much better then infantry) but require 1 food per turn. That means you need a larger working population to maintain a cavalry force.

How big does the pen have to be? Will a 1-tile floor space hold one animal? Can animals share a pen if they each have a square?

There's only one Plains Land animal in Sector 6 that fits the bill to be used as a mount...

Animals want 5 open spaces for a pen. Animals may share a pen, so long as they each have their own 5 spaces. They will not run away if somebody spends the night watching them, even if they have no pen. Anybody staying up all night will miss their morning shift of work, and military personnel set to guard animals will not watch buildings.
Trained animals will not be implemented, for simplicity's sake. I do not intend to make work animals worth more then a citizen.
