Well, I just found out my favorite thing to do in this game is to run around on foot, jump, and slash Swadian knights,  men-at-arms, and Khergits in the head. One jump, one slash, one kill. Repeat. I found that this can be fairly effective given that I can't seem to hit horsemen too well while they're on horses due to the differences in elevation. Best thing ever is to jump and headshot a charging knight with your sword.

My favorite thing to do was horse archery on a light and fast horse, which has the advantage of not going near anyone with a long poking stick.  :P

I'll have to try jump-stabbing, though. That sounds like a riot. Using their own momentum against them? It's like spear-judo.

If you have a polearm (that is longer than 150 length, I think?) you can rear a horse if you hit its front side, assuming you're on foot.

My favourite pasttime in M&B would be using polearms on those pesky knights.
In fact my standard loadout consists of:
Spear
Pike
Shield
Throwing weapon.

Spears do a decent job in fights against other infantry. Pikes can skewer infantry at suprising ranges and murder knights (that speed bonus is ludicrous) shields are a nobrainer (archers) and thrown weapons... well... because i didn't really need a 3'rd polearm.

My jump slashing strategy was really used to make up for the elevation difference. I want to kill the rider without having to strike the horse several times first. Why slash an armored warhorse six times when I can just jump and slash the rider? I play with Rhodok infantry and archers, and I always order them to bunch up together versus cavalry. The cavalry charge and get stuck in the infantry line. Easy jump kill if I walk around the line. I also found that if there are a lot of soldiers and horses crowding the area, your jumps can get stuck. You end up floating in mid air until room is cleared out for you to land. Extra horsemen slashing time.

I find I usually don't need to jump to slash the rider, I can reach them fine from the ground, even if I had a 1 handed weapon.

Yeah a trust from the ground can hit the rider but you have to aim upwards. Otherwise it only hits the horse (or sometimes a good thrust hits and kills both)

Attacks that hit horses will continue to travel, so you should also hit the rider's legs. That's why leg armor is important as cavalry.

That might have changed in Warband actually, I haven't played in a while so I'm not too sure about it. I think I remember myself thinking that it just got much harder as a foot fighter at the moment I found that out.

A armor value above 50 will still stop most arrows and some bolts from doing damage, and these are fairly inaccurate at long range with some evasive maneuver. So unless said archers are player controlled, getting a heavy suit of armor and charge along with a swarm of heavy troop is usually enough for me, however many archers the enemy might have got. Sieges included.

Invest some points in shield use. It turns bad shields into good shields and good shields into god shields (ones you get acces to with higher shield skill) that can survive well over a hundred arrows.

I'm using the battle sizer. So 1000 people at once. Having full damage on makes a headshot insta-kill you.
