they sold me a mountain goat with no lungs, heart, guts, neck, spine or brain WTF

they obiously had to cross a freezing biome to get to your place , or your place was a freezing biome ,  no idea(it happens same with humans and dwarfs

According to the wiki you can't bruise most of those parts, then again it also claims its impossible to remove most of those parts...

What you'v got here my friend is an empty goat. I reckon there's an elf hidden in the inside and its an attempt at an infiltration!

freezing biomes kill animals by "freezing" out their major internal parts , maybe the elves left the biome soon after the area they crossed frozen
