This may sound silly... but how do you tell survey ships to... well... survey?

Select the ship's Task Group, select the system body, select Geological Survey, and finally, select Add Move.

How do I tell different ships to do each?

Sure you can, there's an option to "Show Moons" in the TG order screen.  There are also options to "Show Comets", "Show Asteroids", and "Hide Surveyed" that I find regularly useful.

Unfortunately It hardly matters because my Survey Ships cannot survey (well cant Geoservey)

Tarran beat me to it :P

Offtopic, has anyone tried bringing Steve W back to the thread? There seems to be less "this game sucks and you suck" now, so perhaps he'll be more open to critique.

On the second tab of the task group screen, you can give default orders to your groups. Just tell them to "Survey nearest body" or "Survey next five survey locations".

Just be sure to give them a conditional order as well. I usually go for "If: Fuel is less than 30%, Then: Refuel at nearest colony"

I had the idea of dropping off colonists on the planet Mars, but I have a feeling that isn't what your supposed to do.

Yeah, they kinda need more to live on than just space suits. Give them some infrastructure if you're going to colonize mars before you Terraform it.

Yes you can. It'll take a while, but it certainly is possible.
