how do i view engravings and make notes?

[k] to look, then

• [-] on the number pad to select the engraving on a tile. [enter] on the engraving and itll bring up a description entry.

[N] for notes, capital 'n'. This was on your hotkey list on the middle pane of your average Dwarf Mode screen. Once you hit [N], it should give you further on-screen instructions. You must also place a note before you can edit it.
