I've got a goblin that somehow trapped himself in a trench outside the fortress. I'm trying to decide between sending a marksdwarf (once I've got one beyond "Dabbling"), or just trying to drown it by channeling a pond into the trench.

Invaders are perfect swimmers.  They will never drown unless there is a roof immediately over their heads.

Wrong. I've pitted a bunch of goblins into a moat (one z-level deep, 7/7, no roof above) and they all drowned.
