Bone Bolts

I have dragons as size 50 so when I killed one it made a stack of 50 bones but my dwarf won't turn them to bolts.

If he's making other bone bolts first, it's because those bolts are closer. Keep in mind that an item 2 z-levels directly above the workshop is considered closer than an item 3 spaces to the left, regardless of how far the dorf actually has to go to get it.

If he's cancelling the make bone bolts task, wait for the bones to be taken to a stockpile, he won't pick them up off the ground or out of the butchery. If the bones are in a stockpile, make sure you don't have any decorate with bone tasks or similar going on elsewhere or have any stockpiles set to take from the stockpile the bones are in. Press k and examine the bones, see if they've got a TSK label, this means some dorf's baggsied it and no-one else can touch it. Find out who and cancel or suspend that task.

There are no bones left and he refuses to use it so he just sits there.

put a stockpile under the bones if there isnt one
build a new workshop just to be sure

You said you killed the dragon. Are the bones still outside? If so, can your dwarves collect refuse from outside?

I butchered it there is no stock pile. Just a stack of 50 dragon bones.

I butchered it there is no stock pile. Just a stack of 50 dragon bones.
Then, as has already been mentioned in this topic, you need a stockpile set to accept dragon bones, and you need the stack of 50 dragon bones to be in it.

Bonecarvers do not require their inputs to be on a stockpile before using them. Hell, I've had my bonecarvers running out onto the surface to grab inputs from the decayed remains of the last orc siege because the haulers couldn't keep up with them.

In that case check to see if any of the following are forbidden:

  • The material the butcher's shop the bones are in is made of (assuming they're actually inside the workshop).
  • The material your craftsdwarf's workshops is made of.
  • Any doors your craftsdwarf needs to go through to get to both the bones and the craftsdwarf's workshop.
  • The bones themselves.

If this doesn't work, go into the refuse section of your orders menu (o-r) and check that your dwarves aren't ignoring refuse and are saving bones.

What's the max a dwarf can carry.
I don't believe there's a hard limit, they just move slower if overloaded.

Just to throw in another idea, perhaps someone else is "thinking" about doing something with the bones (e.g. tossing them in the refuse pile). If that's the case it might help for forbid and then reclaim them.

Nothing new. People have been giving megabeasts extra size to keep them from dying out in worldgen. If there was a problem there, we probably would've heard of it.
