I just want the catapults to work like actual catapults. You know, like, actually throwing rocks (and other objects) instead of just firing them straight ahead like a ballista does.

Onagers in Rome: Total War were actually useful against infantry because they threw boulders (or flaming projectiles) so that they landed right on top of the enemy. Right now, siege engines are pretty much useless against anything but corridor defence, when the enemy has no choice but to run right into the projectile.

We don't need more siege engines, different ammo types, different sizes, or behemoth 9x9 monsters of doom, we need siege engines that can actually aim and hit stuff rather than just firing wild shots at targets at the same z-level, in the four compass directions only, and pray that one of the many shots you fire will actually hit an enemy or two. Granted, they're not meant to be used against squads of 4-7 goblins, but against large formations, but they should still be far deadlier than they are, I feel.
