Extensive kingdom builder games?

I love building up an empire to trounce other empires, but most games don't deliver. It is a whole bunch of 'place mine -> place mine -> place mine -> make enough money to pump out 6 uber-doods a second -> pown everyone'. I'm looking for a game a bit more refined than that. Something like Stronghold 2, where you have to have your blacksmiths turn some of that ore into a sword and some armor before you can train up a swordsman.

The Settlers games?
The Total War:s has some of the things  you're looking for, but also some of things you don;t want. That can be remedied with mods/putting difficulty to max.

it sounds like you've been playing RTS games.  maybe branch into 4x instead?

The Settlers games?

Are awesome, but are really annoying if your used to micro managing units. I'd say Settlers 2 is the one to try. Anything after that seems to lose the Settlers feel of it. (There is also a open source version called Widelands)

Anyone know of any games where your goal is to sabtoge an empire, not build one? What if you are a spy that is leading an rival empire, and your goal is to stop this empire from growing?

Off the top of my head, Settlers. I actually prefer Settlers 3 to 2, since it's simple enough to be fun but complex enough to provide entertainment. S4 takes simplicity too far.

Knights of Honor? Im doing a Lets Play of that over in Play With Your Buddies, but it might not be what you're looking for. Its on a much larger scale then the Settlers or Stronghold, but it definately has 'empire building'.

If you want something different, take a look at Knights & Merchants. It's 90% economy, 10% military. Or Beasts and Bumpkins.

In Pharoh, the process for building your swordsman would be:

build a copper mine --> build a storage yard to store the copper --> build a weaponsmith --> build roads amongst these buildings ---> wait for job placement people to locate individuals to work at these facilities ---> wait for miner to mine copper and then for transport infrastucture to get the copper to where it needs to be, the smith to build the weapon, and send it back to the supply yard ---> build a military recruiter ---> build a military fort --> wait for your recruiter to find someone to give the sword to...viola! You have a swordsman.

Impressions Games building sims are quite nice and addictive.  "Zeus" was really great.

Europa Universalis II is a great game with lots of possibilities.  There's even a 3 now but I haven't played it.
