I woke up this morning and texted her, "Good morning! :) I love you."

No response until 9am (generally we're both up and about by 7am), and even then, it's 'Sorry lol I stayed the night with [friend] and [her friend].'

Huh. Okay... So I talk to her awhile, and the conversation was a little strained. I kinda gave up and told her I would talk to her later. A few hours later, I texted her and my friend both, and invited them to go to the bar with me. They both refused, which is fine. I didn't expect them to go with, but I had to offer anyway. She kept talking to me a bit, and at the end, I said, "I will, thanks. :) I love you"

No response. For four hours. At six, she texts me, "I probably won't text the rest of the day. My mind has been racing all day and now I'm depressed. Have fun tonight. I am sorry Jacob."

In my universe, "I love you" is a vow. It's swearing by saying.

(I put what I understand to be an uncommonly high stock in your word being your bond, though, so things may be different for others)

Also its not (or in the least, less as) a reminder and more of...well, people saying what they sincerely mean.

It's a cultural thing, I believe - Americans make much more fuzz about that.
