My SO finds it helpful to just have me tell her a story (usually something inane and rambling about when I was a kid). Apparently my voice is soothing, and she can focus in on that.

Great. I think I managed to piss off my crush. She seems to have been in a bad mood for the past few days and doesn't want to talk to me.

The only thing I can think to do about it is to send her a text(I doubt she wants to answer a phone call from me) to apologize.

I would actually do nothing, in that case. If she doesn't want to talk to you, then literally any effort at communication is just going to come off as ignoring what she wants. When she wants to talk, then you might open with an apology.

My mom is mentally sick and she's probably never going to get better.
That's tough.
My mother is as well, although she's gotten treatment some time ago and has gotten better.
Even turned in a supportive figure recently. I would have probably dropped out of university and just went to work if not for her.

Yeah, that sounds like my mothers brother. Dealing with him is exhausting and would drive me up the wall if I had to deal with him on a more regular basis.
Best of luck, but if she's really a hopless case it might be best to humour her a bit, knowing that you won't have to deal with her on a daily basis once you move out.

She didn't talk to an expert, but based on my stories my own counselor said that, if I was correctly representing her, she seemed pretty fucking sick.

And yeah, I'm humoring her now, since fighting with her over her rampant whites-only racism, or her constantly going back on her word, or things like offering to sous-chef and then deciding that ~getting the oyster sauce out of the fridge isn't her job and getting snippy because I dared to ask her~... well, it's not worth it.
