I am preparing to build my first aboveground structures but I just want to know how I can put a roof on the building without leaving access to said roof with a staircase or leaving a gaping hole in the ceiling because of a removed staircase.

The only way I can think of doing it is by building a 2 tile platform next to the building up the same amount of Z levels have a ramp go across, build roof. Dismantle platform/ramp.

Are there any simpler ways?

You can fill in the hole left from removing a staircase with a wall section on the lower level.

Think scaffolding. Staircases are removed from the case below them so you can build straight up on one tile and remove each level from below when done.

Roofs are easy, simply make a scaffolding using stairs and reach the top and construct then deconstruct

That only works if you dug them out of existing stone or soil - if you constructed them, you must use (d) - (n).

Build a several Z level high wall around the construction site.  Pump magma and water in alternately to create a solid block of obsidian.  Disassemble the retaining wall, then hollow rooms out of the obsidian block.

That's the properly dwarfy way to build above-ground structures.

Technically, that's how the Goblins build their towers (since they're smooth cast obsidian, rather than obsidian blocks), though somehow they're able to make natural obsidian fortifications without floor tiles above them...

It's pretty straightforward as long as you aren't doing anything fancy - just build the building, put ramps/stairs outside (ramps are easier if it's just one floor - you only need to build one thing instead of two with stairs) and then remove the ramp.

If you are doing something fancy, just use lots of stairs. Scaffolding.
