I thought we explored the left hallway door (opposite the chained door leading to shopkeep room).

So there's the bloody room, West, Northeast, and Southeast, and of course South to the hallway.

So of the three bloody room doors, which are the sounds coming from?

AFAIK the west door has the breathing, northeast has jangling, and southeast has the scyther we just saw.

Right?

We need to go back to the door on the West side (west SAAAAAIDE!) of the hallway. The bloody room doors are populated by a known scytheboy, a huffing scytheboy, and a jinglejangle scytheboy respectively.
