Sounds like a desperation measure if I've ever seen one. It's up there with dwarves catching vermin when there's no more food to eat. (I'm surprised they don't become Herbalists outta desperation. The floor has free food, doesn't it?)

Fallen London's "wines" are mostly brewed from mushrooms, which is already the same idea as "dwarven wine" (and "rum", and "beer", and "ale").  Morelways wine though is said to have 'Notes of limestone, cobweb and glim-dust' (glim being mysterious crystalline chitin from the roof... essentially, Forgotten Beast moltings).
