Listen. I made two. And there's only so much room in a king-size roaster pan! Eventually you just kind of have to stop shoveling in cheese and save it for sandwiches. Fortunately I got all the parmesan, romano, and cottage cheese in, plus half the ricotta and mozzarella, so the best sandwich-toppers are what I have left. Sadly, I can never do this again, because it wasn't until I reached the checkout line that I realized I'd spent an entire week's budget on just the cheese.
