Peanut Butter sauce on rice is actually the only reason I keep my cupboard stocked with peanut butter at all time. What is your recipe? Mine is based on yoghurt, but I can't conveniently have yoghurt stored at all time. :/

Peanut Butter sauce on rice is actually the only reason I keep my cupboard stocked with peanut butter at all time. What is your recipe? Mine is based on yoghurt, but I can't conveniently have yoghurt stored at all time. :/

Chicken meat, I normally do strips of skinless breast, pre cook this, otherwise you either burn the peanut sauce or get raw chicken.
Diced tomato
diced onion
red pepper/cayenne
Peanut butter

You might need to add some broth/water/milk/beer/whatever to thin it out a bit.

experiment with variations in quantity and type of spice.

Its different every time, but always good.

Okay, so you use broth instead of my yoghurt. Well, I'm a vegetarian, so I'll switch the chicken for tofu (although environement-wise, chicken is almost a vegetable), but I think I got a recipe for tomorrow's meal.

Okay, so you use broth instead of my yoghurt. Well, I'm a vegetarian, so I'll switch the chicken for tofu (although environement-wise, chicken is almost a vegetable), but I think I got a recipe for tomorrow's meal.

Sometimes the juice from the chicken/tomato/onion is enough if you like the sauce really thick. But I usually do end up adding some broth (or whatever else is handy).

But I am not sure if the vegetably nature of tomato and onion would mix well with yogurt.
