Meh, I've mined out around 800 iron in one of my minecraft maps... Most of it from a single massive cave system even. Remember, your average spelunking trip nets at least 1 full stack of iron before you resurface again. 500 isn't quite as much as it's made out to be. Over 75 iron blocks. With a couple stacks of iron bars in reserve in chests.

Diamond on the other hand would be incredibly difficult. I have 5 or 6 diamond blocks in total from all that. So it's a good dozen+ times harder.
