Cows actually have really long necks that they can extend at will. This is also how and why they always go for grass on the other side of the fence before eating what's in the field with them.

I just want you to know that if I saw a cow extend its neck up to the roof of a decently sized one-story building, I would flip the hell out.

And probably burn the surrounding countryside to the ground, just to be sure.

There's no real need to weaponize it. Extendoneck cows would be strictly inferior in combat capability to normal cows, which are primarily useful as ammo, disguised explosives, and disease vectors, the first of which would be made more difficult due to awkward neck shenanigans and the latter interfered with by their freakish eldritch deformity making people and other cows avoid them like the r'lyehian plague.
