What tokens would allow me to enable a unicorn to breed with a horse, for example?
What allows me to regulate how fast a species breeds?

Interbreeding is not currently possible. Mules just kind of exist, they aren't born.

disregarding cross-breeding, how do I change the rate at which a species multiplies?
For example, rabbits should multiply at a higher rate than dogs.

[liTTERSIZE:X:Y] controls how many babies are born in each litter, with X being the minimum and Y the maximum. Setting the [CHILD:Z] tag to a low value like 1 or 2 means that animals grow up faster and are ready to start breeding at a younger age.

The one other tag that controls population growth is [MULTIPLE_LITTER_RARE], use this if you want there to usually only be one child per birth.

Using these tags in combination, you can get some pretty explosive growth within the scope of a few years, although I think there can never be more than 50 individuals of one species type on a map (other than the playable civ), and that creatures can still give birth no more frequently than once a year.

If you mean gestation period, I don't think there's anything for that yet. I'm kind of surprised no-one mentioned it, though I daresay it'd be a bad thing because there'd be about four times as many cats born.

Otherwise, yeah. Littersize is about all you can use.

Read this as [MULTIPLE_LITTER_RAPE]. The thing is that I was not surprised in the least as, really, it is the next logical step in kitten brutality. We've done everything else.

I'm picturing one of those catlovers with fifty-million feline dependents, the kind that tend to get the drowning chamber in many fortresses, is actually the brood's biological father. Obviously its a trait acquired from too many generations of interaction with those dirty elves. We should have known no good would have come of it.
