I was wondering is there any way to mod the game so you start with more points in the embark menu or the adventure starting menu

You'll need to use either Tweak or Dtil to do that, and it's unlikely that you'll be able to get either to work with the current game version.

Alternatively, you could just lower the value of everything, but that'll mean that any goods you want to sell while you're actually playing the game will be worth less.

Nope.  You could temporarily mod the files so that steel's valuemod is much higher, netting you more points for selling one of your axes, though.  Then mod the value back to normal after starting.

Actually I just wanted to be able to by more and in adventure mode be able to start with higher skills

Couldn't you just buy something, close the game, mod the value of the item, reopen the game, sell the item, close the game and return the value to normal? Basically the same as modding the material values of the default starting items in Fortress Mode? I haven't tried this (don't care for adventure mode much, myself), but it seems logical.
