but if tau get first turn broadsides can take down some valkyries like flies so deployment is really important.

...if you're not deploying them behind BLoS terrain on the first turn, you deserve to lose...
Vendettas, point for point, have more firepower than broadsides. They also have more survivability, even concentrated in one model as they are. A single vendetta at 140 points would have a reasonable shot at wiping out a full squad of broadsides (210 points, without upgrades) if it were within 36", and two (280) would wipe out a full squad out to 48" with room to spare, for only 70 points more, even if the squad didn't buy any wargear upgrades.

Broadsides will indeed break most things easily, but they'll pop Vendettas with a penetrating hit on a 3, wheras it takes a 5 to get a penetrating hit on a russ or Monolith.

Plus, a Russ actually has a chance to get Hull Down or into Cover, a Vendetta, which is bout 4 - 6" up in the air and the size of a house, is never, ever going to get into cover. Outside of heavy multi-level Urban maps, i've never seen a Vendetta get into cover, it's just not possible. They're too high and too big.

On vassal, the height's irrelevant, and I'm sure it would be trivial to make the stand shorter, although then they'd lose the advantage of being able to see over everything... :/

I might almost suggest sniper rifles, since the Tau's small squad sizes and relatively low leadership make them susceptible to pinning.  Probably.
How would Griffons do? They're barrage, so they can rain pinning death without exposing themselves, and Accurate Bombardment should make up for the loss of LOS.

If enough of the tau get pinned, it might be even possible to get some Ogryn into their lines.

Hmm, last night I had some good luck with scout walkers outflanking...they really are the best close combat choice I've found so far.
