Something like, I don't know, like Defend the Castle but with a set amount of days, or a game with a Multiplayer version, not like King of The Hill, something like in Starship troopers when they are in that Fortress.

Not a "defend the castle" game, but a "tower defense game", Harvest Massive Encounter may interest you. To me it seems to be the ultimate evolution of that genre.

I was thinking of the hero sieges mostly, but there are a few starship troopers maps and I think I remember at least one of them having a camp to defend. But yeah, it isn't a perfect solution, but it is a start...

 If I may question, do you mean a game of setting up static indestructable defenses to keep the offense from reaching a point or a actul defense game where you have units with health, a goal with health and swarms of baddies slowly wearing you down? Much like the early starcraft campaign where you must defend the base for 30 minutes?

 In which case I must say Company of Heroes has quite a few campaign levels like that.

Stronghold is not exclusively a defense game,but offers plenty in that regard.

Just be prepared to deal with resource management.

I would also recommend Harvest. Great game, its pretty much a sandbox TD and is heavily moddable through lua scripting.

Also, there is a new one out, but I cant remmber the name of it, it was pretty good.

I know you dont want flash ones, but tryout that Vector Tower Defense 2, that was a really good one.

I never played it myself but I recall there being an old warhammer 40k game that involved alot of defence... Space Hulk maybe?

Cortex Command (http://www.datarealms.com) is pretty much like that - you build up a bunker around your brain-in-a-jar and then have to hold it indefinitely against waves of troops. Any reinforcements have to be drop-shipped in and paid for with gold that you've mined. Did I mention the destructible terrain? 
It's still in dev but if you're playing DF that's not going to be an issue...
Worth buying it early, too, as it's a lifetime license and allows for mods, which are pretty brutal.
